Ingredients

1 lemon
1oz butter of margarine
1 small cup of sugar
1 egg (beaten)

Method

1. Heat Jar
2. Grate the rind of the lemon.
3. Squeeze lemon a place juice in a jug or other suitable container.
4. Melt the butter in a saucepan, add sugar and stir until sugar is dissolved.
5. Add lemon juice, grated rind and stir
6. Pour in egg and stir quickly until mixture bubbles and starts to thicken.
7. Pour Lemon Curd into jar and leave to cool.
8. When cool put on lid
